Using EPC90124 demo board, we notice that maximum supply voltage is 160V printed on the PCB ; is there any reason for this value ? VDS maximum value of EPC2207 is 200V, so why not use EPC9124 with 200V DC power supply ?

This is common for most power electronics switching applications: a typical maximum operating voltage is about 20% (could be higher or lower depending on the design…and designer) below the absolute maximum rating of the devices.
in the board Quick Start Guide ( EPC90124_qsg.pdf (epc-co.com)) there is this note:
Maximum input voltage depends on inductive loading, maximum switch node ringing must be kept under 200 V for EPC2207.
